We had spotted him for many years and knew that he would go far, where the prestigious terroirs where he owns vineyards deserved to be led (Cramant, Chouilly and Oiry). It is now done with the small remodelled range of his artisanal production in the noble sense of the term. This child of Sarcelles who only came back to Cramant to keep a promise made to his delightful grandmother is a discreet man who compensates for his shyness by dreaming before doing, like all the great silent ones. Communication is the business of his wife, Karine, an oenologist, equally passionate but ideally complementary. The couple now produces some of the purest, straightest, most subtly saline and mineral whites in the whole of the Côte des Blancs, which has not escaped the notice of a few good observers, sommeliers and merchants. May all this last with happiness, for them as for us!

Champagne Guiborat. Le Mont Aigu. Blanc de Blancs. Brut. 2013

A very pretty, full bouquet, with notes of white fruit, citrus and brioche. Superb attack in its proportions, in resonance with the nose, a certain greediness in the aromas evoking ripe raisin. The finish is quite dense, pastry and then mineral. Very nice wine. 17/20.
