Under the wise management of Thierry Bellicaud, the Chablis winery, owned by the AdVini group, has prospered, intelligently supplementing with grapes a vineyard heritage that was intelligently built up during Michel Laroche’s time. The wines have gained a lot in fruitiness and saline density, qualities that they magnify with ageing. If the Grand Cru Blanchot is the technical team’s favourite, the village Cuvée Vieille Voye is simply sublime in its purity of expression.
