Le Domaine tient sa personnalité de la particularité de sa culture en terrasses, à l’ombre de la montagne de l’Alaric, contemplant la vallée de l’Aude et les montagnes noires. C’est dans cet environnement rythmé par le Cers Tramontane et le soleil que nos cépages profitent d’un substrat argilo–calcaire. Ce cadre authentique favorise l’épanouissement de nos 32 Hectares de vignes, où le vin acquiert saveurs et parfums. Afin de conserver et d’optimiser ses qualités exceptionnelles, nous nous attachons à effectuer des opérations de tailles, de cultures respectueuses de l’environnement tout en favorisant l’épanouissement de la vigne ; ce qui implique réflexion, anticipation et efficacité. Cette grande attention va de paire avec la démarche qualité que nous nous efforçons d’avoir. Les raisins récoltés à la main au pic de leur maturité sont présélectionnés lors des vendanges, puis vinifiés suivant une méthode qui extrait le meilleur du fruit, pour donner des vins expressifs avec des bouquets différents aux saveurs de réglisse, de fruits rouges, de garrigue, de thym ou de vanille.

The particular character of our Domaine lies in the terraced vineyards that rest in the shadows of the Montagne d’Alaric looking north across the valley of the Aude towards the Montagne Noire. Here our vines benefit from a terroir defined by the warm Mediterranean sun, the dry winds of the northerly Cers Tramontine, and a fortuitous subsoil of argilo-calcaire (limestone & clay). It is the natural integrity and authentic character of this very beneficial environment that has enabled our 32 hectares of vineyards to develop as they have, and is the source of the particular aromas and flavours of our wines. In order to retain and make the most of these exceptional natural qualities we employ pruning methods and sustainable viticultural practices that respect the environment and encourage the vine to develop naturally, all of which requires careful consideration, planning and efficiency. This level of care and attention is part and parcel of the quality approach that we strive at all times to maintain. The grapes are handpicked at the height of their maturity and are pre-selected during the harvest itself, prior to being vinified in such a way as to bring the best out of the fruit and yield genuinely expressive wines with flavours of red fruits, liquorice, thyme, vanilla, and the aromatic garrigue character particular to the Languedoc.
